A member of the rhubarb family, buckwheat is not actually a grain. Buckwheat is often easier to digest for those who might have trouble digesting the protein gluten. Buckwheat possesses a higher than average protein micronutrient profile and is a silky soft flour with a pastel color and beautiful flecks of black hull. Approximate protein is 12%.
