This organic flour is a blend of our Edison Hard White Wheat and Platinum Hard White Wheat. It is a temporary replacement for our Edison Hard White Wheat Flour. This flour is sweet and buttery with a lovely golden color. Excellent in sourdough baked goods, pizza dough and anywhere wheat flour is desired. Approximate protein is 10-13%.
